Chocolate is one of my favourite products to use in baking, so I have prepared a very delicious and luscious brownie recipe with cheesecake topping.
For the brownie batter:
- 2 eggs;
- 50 g Greek yoghurt;
- 40 g rice or oat flour;
- 30 g cocoa;
- sweetener (I used Flavour Drops milk chocolate flavour from BalticVitamins);
- 50 g sugar-free chocolate;
- 2 tbsp. 5 chocolate chips
- 1 tsp baking powder.
For the cheesecake mixture:
- 1 egg;
- 150 g Greek yoghurt;
- 100 g cream cheese;
- sweetener (I used Flavour Drops from BalticVitamins).
Preheat the oven to 190 degrees. Then start making the brownie batter - beat the eggs, yoghurt and sweetener in a bowl. Add all the dry ingredients to the mixture and stir well. Then melt the chocolate with the butter and add the liquid to the mixture, mixing well.
Next, prepare the cheesecake mixture: Beat the egg in a bowl, add the remaining ingredients and mix until smooth.
Line a baking tray with baking paper and pour the brownie batter into the tray first, then carefully pour the cheesecake mixture over the top. Stir the cheesecake mixture slightly into the brownie batter and place in the oven to bake for 30-35 minutes.
Cool the finished snack, cut into pieces and serve.
